This is a repost of my original Camplite kitchen sink upgrade. The attached MS Word document has the details including suggested sources. Currently I do not recommend the faucet I used. It works very well but tends to turn itself on when traveling. Not a problem if you turn off the pump but can be an issue when hooking up at a CG or stopping on the road. There are others available. PM me if more info is desired.
Any 20 minute job can be stretched to a week with proper planning

In stead of starting a new post, charliem I hope you don't mind me adding our sink option to your post.  Our 21 BHS,  I special order Franke Bar Sink Onyx Granite from Lowes, it has a posted weight of 22lbs, heavier than stainless, but we liked the look and it composite material like Corian. It has inside rim to place a cutting board, need to find one that fit or make one that does. I installed new faucet and new Pex brass fitting 90 degrees adapters so Pex pipe is flat in lower cabinet. I used 4 black plastic couplings to re-plumb the sink drain and to keep the air vent up high in original position. I used a laminate jig saw blade (which has down stroke cutting blade design) worked like a champ. You can see in one picture were the laminate lifted off particle wood skin on foam core. 

I also priced out new counter tops from a local shop. High end laminate Formica, 3/4" particle board $343.44 + 25.00 to cut out sink and stove holes. Corian was over $600 and to get the warranty on materials they would have to install. My brother told me he has seen Corian counter tops at Habitat for Humanities at his local store in St Pete Fl, it's possible to make my own if I find used counter top. Youtube has video's on how to cut Corian. With those prices I re-glued the Formicia were it came loose, just remember to tape off the face of upper board and foam, as contact cement will melt foam core. I used an acid brush and flattened the metal part so it slides under the Formicia better.  Here's the info and pictures.
